Caramelized Onion Whipped Butter

The perfect pairing to fresh bread to elevate your hosting game. Creamy, salty, sweet, and spicy (if you like it that way.)

Gather:

2-3 sticks unsalted butter, softened to room temperature*

1 medium red or yellow onion, diced finely

1/2 tablespoon brown sugar, packed

1-2 teaspoons olive oil

Sea salt (I use Trader Joe’s Portuguese Flor de Sal)

Red pepper flakes, optional

Prepare:

  1. Heat olive oil in small sauce pan and add diced onions. Sauté until onions begin to soften and become transparent. I recommend spreading the onions flat in the bottom of the pan. Add brown sugar and stir to coat. Add sprinkle of sea salt. Cook with frequent stirring until caramelized and there is a thickened brown coating. Add red pepper flakes if a spicy flavor is desired. Remove onions from pan and place in a bowl to cool.
  2. Once the onions have cooled, whip the room temperature softened butter in a mixer with a whisk attachment. When light and fluffy, fold the onions into the whipped butter with a spatula. Take care not to pack the butter down or knock out the air.
  3. Spoon butter into serving vessel or to board if making a butter board. Sprinkle with sea salt and red pepper flakes to garnish, if desired. You can place it in the fridge if making in advance but I recommend removing it from the fridge before serving for a softened texture easier for spreading.
  4. Serve with fresh bread like our favorite No Knead Rustic Bread or crackers.

Warning: this whipped butter is addictive and will have everyone asking you for the recipe! In our home we love to pair it with our favorite Rustic Bread.

*Use 2 or 3 sticks of butter depending on the final quantity you desire to serve. Either combine well with the rest of the ingredients. The only difference will be ratio of onion pieces to butter, but both are flavorful and present well.
