Diced Rainbow Salad

This salad is one of our family and hosting favorites – bringing a pop of color and freshness to any meal.

Gather:

1 large cucumber

1 pint cherry tomatoes

1 yellow bell pepper

1 orange bell pepper

1/2 red onion

Optional: fresh leafy greens of your preference

Process:

Thoroughly wash all vegetables and set aside to dry. Dice vegetables and add to serving bowl, we typically like to serve it in glass for the visual. The more uniform the pieces are, the more polished the presentation will be. If adding leafy greens, chop them finely. Combine all vegetables together and add your favorite dressing. We recommend Our Favorite French Dressing or Portuguese Vinaigrette Dressing!
