Portuguese Vinaigrette Dressing

This dressing is the perfect way to dress up the humble boiled potato.

Gather:

1/4 cup red or white wine vinegar

1/4 olive oil

2 crushed garlic cloves

Fresh parsley

Salt

Paprika

Process:

Stir to combine vinegar, olive oil, and garlic. Add fresh parsley, salt, and sweet paprika (not the spicy or smoky variety) to taste. Store in an airtight container like a mason jar on the counter for up to a week.

Drizzle over boiled potatoes, use it as a dip for fresh bread, serve it over salad or as a topping over chicken. You can’t go wrong with this traditional Portuguese vinaigrette that will have your guests asking where you found the recipe!
